Student (m/f/d) for a 3-month internship and subsequent thesis in the field of analytics with a focus on applied protein research

As part of the research project “Development of a protein powder for vegan foam masses” (short HyWePro ), we aim to develop a process for the production of a protein powder based on hydrolyzed wheat protein, which is intended to produce stable foams for complex formulations. Various foam-based, plant-based model systems will be used to test the result of the hydrolysis approaches (e. g. sponge biscuits, foam kisses). The multi-stage hydrolysis process is to be designed in such a way that the protein powder has targeted techno-functional and sensory properties.
Main tasks of this internship and the subsequent thesis:

• Literature review in the fields of protein hydrolysis and fractionation of wheat protein
• Optimisation of a multi-stage hydrolysis process based on preceding trials
• Analysis of the chemical composition, techno-functional and sensory properties of hydrolysates and model systems (pastries)
• Support in the development of a fractionation process using preparative HPLC (SEC)
• Statistical analysis and presentation of data in relation to the project aim

Your profile

You are currently studying food technology, food chemistry, ecotrophology or related disciplines and would like to gain practical experience in the field of analytics during your studies. Ideally, you already have some practical knowledge in one or more of the above-mentioned areas. You will available for a total of 6 months (on-site). You have already gained initial experience in the field of food analysis and feel at home in a laboratory environment. You have already gained initial experience in the field of food analytics and feel comfortable working in a laboratory environment. You have a very good knowledge of German and/or English.
